This banana bread is so rich with a tender crumb. It is packed with banana flavor and pretty healthy too. Plus you can add yummy ingredients like pecans or chocolate chips to make it extra fancy.

Ingredients
- 2 Cups Flour we use 50/50 whole wheat and white
- 1 Tsp Baking Soda
- 1/2 Tsp Baking Powder
- 1/2 Tsp Salt
- 5 Banana overripe, mashed
- 1 Flax-Egg 1 tsbp ground flax and 3 tbsp aquafaba for each egg
- 3/4 Cup Coconut Sugar or brown sugar
- 1/4 Cup Applesauce
- 1/4 Cup Coconut Oil or vegan butter
- 1 Tsp Vanilla Extract
- 1 Tsp Cinnamon

Instructions
- Preheat oven to 350 F (176 C).
- Mix flax eggs and set aside to gel.
- Mix dry ingredients together in a large bowl.
- Mix wet ingredients, including mashed banana (can use your blender for this task, saves on mashing the bananas).
- Add wet ingredients to dry and stir until just blended.
- Pour batter into a greased 9X5 inch loaf pan. Bake for 50 mins. Poke with a knife or cake tester, it should come out clean.
