Banana Bread
This banana bread is so rich with a tender crumb. It is packed with banana flavor and pretty healthy too. Plus you can add yummy ingredients like pecans or chocolate chips to make it extra fancy. I love packing homemade treats into my kid's lunches. They help me with baking, and that is a great opportunity to build food skills!

  • 2 Cups Flour we use 50/50 whole wheat and white
  • 1 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 5 Banana overripe, mashed
  • 1 Flax-Egg 1 tsbp ground flax and 3 tbsp aquafaba for each egg
  • 3/4 Cup Coconut Sugar or brown sugar
  • 1/4 Cup Applesauce
  • 1/4 Cup Coconut Oil or vegan butter
  • 1 Tsp Vanilla Extract
  • 1 Tsp Cinnamon

Instructions
  1. Preheat oven to 350 F (176 C).
  2. Mix flax eggs and set aside to gel.
  3. Mix dry ingredients together in a large bowl.
  4. Mix wet ingredients, including mashed banana (can use your blender for this task, saves on mashing the bananas).
  5. Add wet ingredients to dry and stir until just blended.
  6. Pour batter into a greased 9X5 inch loaf pan. Bake for 50 mins. Poke with a knife or cake tester, it should come out clean.
